In a large pot, bring 4 cups of water to a boil. Add the Thai tea leaves, star anise, cardamom pods, and cinnamon stick. Reduce heat and simmer for 5-7 minutes, stirring occasionally.
Remove from heat and strain the tea through a fine mesh sieve or cheesecloth. While the tea is still hot, add the vanilla extract and sugar if desired. Stir until dissolved.
Allow the tea to cool to room temperature, then refrigerate for at least 2 hours or until completely chilled.
Fill tall glasses with ice cubes. Pour the chilled tea over the ice, leaving about 1 inch of space at the top.
